AUS-MEAT LANGUAGE

To ensure customers can order exactly what they require (and get it everytime) AUS-MEAT (Authority for Uniform Specification Meat and Livestock) has developed a set of objective descriptions for use by producers, abattoir and boning room operators, wholesalers, retailers, meat exporters and livestock exporters.

WHAT IS THE AUS-MEAT LANGUAGE?

The Language is based on product description and objective measurements of various carcase traits such as hot weight, fat depth, sex and age of animals. Processors use the Language to define company specifications, which determine particular `grades'. The Language covers descriptions for primal cuts and offal products derived from Beef, Veal, Sheep and Goat. The AUS-MEAT Language has been adopted throughout the Australian meat industry and by most customers (of the meat industry) in importing countries.

AUS-MEAT ACCREDITATION

To ensure the accurate use of the AUS-MEAT Language, each export abattoir and boning room is accredited by AUS-MEAT. Accreditation requires each establishment to implement and maintain an AUS-MEAT approved quality assurance system. When purchasing from an AUS-MEAT accredited establishment a customer can be confident that effective quality assurance procedures are in place from receival, processing and packaging through to labelling and description. AUS-MEAT accreditation assists the meat industry to deliver consistent, accurately described meat products that conform to the customer's requirements.
