VEAL (LV / HV)

The terms referred to in the Veal section as LV and HV represent the variance of weight between the two criteria.

Light Veal (LV) -  Female or entire male with no permanent incisor teeth / no secondary sexual characteristics and a hot standard carcase weight (HSCW) of 0 to 70kg.

Heavy Veal (HV) - Female or entire male with no permanent incisor teeth / no secondary sexual characteristics and a hot standard carcase weight (HSCW) of 70.1 to 150kg and when carcases show youthfulness and pinkish flesh.
