AUS-MEAT

AUS-MEAT Limited is a National Organisation responsible for quality standards and specification of meat and livestock.

AUS-MEAT has established a national uniform description system for both meat and livestock including cattle, sheep and goat and underpinned by the AUS-MEAT Language.

The AUS-MEAT Language is based on objective carcase measurements including carcase trim, hot weight, dentition (age), fat thickness which are carried out along the processing chain and extends to primal / sub primal cut specifications as specified in this edition of the Handbook of Australian Meat.

The AUS-MEAT Language has been adopted throughout the industry from the farmer on the land, to the abattoir or packer, importer and distributor. The AUS-MEAT Language ensures you get not only what you want, but also a consistent quality product.

To assist the meat industry in producing consistent, accurately described meat product to meet market requirements, AUS-MEAT has established specific and high accreditation standards for abattoirs, boning rooms and suppliers. All licensed export abattoirs and boning rooms must be accredited by AUS-MEAT.

Accredited establishments must operate with an AUS-MEAT approved quality assurance program and must use the AUS-MEAT Language in all trading. Each accredited establishment must have on­site an AUS-MEAT accredited officer in charge of AUS-MEAT standards. AUS-MEAT plays a vital roll as custodian of the system by regular audits of abattoirs and boning rooms giving assistance to management to establish and maintain quality assurance programs.
