Intercostals - Lean muscles situated between the rib bones.
Lateral - Away from the mid-line.
Marble - Intra-muscular fat deposits.
Ovine - Sheep.
Paddywhack - Connective tissue (ligamentum nuchae).
Patella Bone - Knee cap.
Primal Cut - Major separated cuts of the animal.
