In recent years there has been increasing specialisation within the livestock industry to service the needs of individual market sectors. There are primarily two types of livestock feeding in the Australian beef industry:

  • grass or pasture fed, and
  • grain fed

GRASS FED BEEF
In Australia the majority of cattle are raised and fattened on natural pastures. Variations in seasonal geographic factors influence the style and quality of beef produced off grass.

Grass fed beef is lean and is generally favoured by many consumers because it is seen as healthy and low in fat.

VEAL
The production of Veal in Australia is associated with both the dairy and beef industries. Light weight Veal carcases weighing less than 70kg are typically produced from dairy calves (milk fed). Veal carcases weighing up to 150kg are produced from vealers or weaners that have had a diet of milk and grass. As a result of grass feeding, these heavier carcases display a light pink muscle colour.
